Ingredients: 1 box of your favorite brownie mix (Ghirardelli, loaded with chocolate chips) 1/4 cup unsweetened applesauce 1/4 cup oil 1 egg 1/4 cup water 1/2 cup creamy peanut butter (I use Jif), 6-8 Reese's milk chocolate peanut butter cups (regular size), chopped

Directions:1. Preheat the oven and make your brownie batter (using oil, egg, and water) according to the package directions, but substitute half of the oil for unsweetened apple sauce. Grease an appropriately sized baking dish (usually 8x8). Pour the batter into the baking dish. 2. Put the peanut butter in a small sauce pan, and heat the peanut butter on medium low heat, stirring frequently with a spatula, until it is melted and a thinner consistency (just a few minutes). You want to be able to swirl it around in the batter. 3. Carefully pour the peanut butter all over the top of the batter. Using a table knife, gently swirl the peanut butter into and around the batter. 4. Sprinkle the chopped Reese's cups on top. 5. Bake your brownie batter according to the package directions. I usually cook mine on the low end of the time given (about 40 minutes). Let the brownies cool completely before cutting. Makes 12-16 servings. |

Notes: Sometimes the best recipes are the simple ones that don't require making everything from scratch. Who has time for that anyways! Nick and I both love chocolate and peanut butter, and Nick really likes Reese's cups. We had brownies similar to this at a Superbowl party, but felt the amount of peanut butter that was used overpowered the chocolate brownies. I've determined 1/2 cup of peanut butter is just the right amount to achieve the perfect balance of flavors. Despite what I say, you may add as much peanut butter and Reese's cups as you like... this recipe doesn't have to be exact if you don't want it to be. Just a side note, my favorite brownie mixes from Ghirardelli are dark chocolate and triple chocolate.
