For the filling:
3 large apples, cored, peeled or unpeeled, sliced (I like more fiber, so I keep the peel on)
1 can pitted red tart cherries in water (15 ounces), drained
2/3 cup chopped walnuts (optional)
1/4 cup or 1/2 cup granulated sugar (use the higher amount if you like it sweeter)
1 1/2 tbsp orange juice
1 1/2 tsp grated orange zest
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp cornstarch

For the topping:
1/2 cup old fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/4 cup unsweetened shredded coconut (optional)
1/2 tsp cinnamon
dash of salt
1/4 cup unsalted butter, cold

Directions:
Directions:
1. Preheat the oven to 375 F.
2. In a large bowl, combine the apples, cherries, walnuts, granulated sugar, orange juice, orange zest, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1 tbsp cornstarch and toss well to combine.
3. For the topping, in a medium bowl combine the oats, brown sugar, flour, shredded coconut, 1/2 tsp cinnamon, and dash of salt. Cut in the butter until the mixture resembles course crumbs. Set aside.
4. Lightly spray a 8x3 round cake pan (or a 8x8 square baking dish) with Pam spray and pour in the apple mixture. Then sprinkle the crumble mixture over the top of the apple mixture.
5. Bake until the apples are tender and the topping is golden, about 35 minutes. Serve warm or at room temperature, topped with fresh whipped cream or vanilla ice cream. Makes 6 servings.

I like apple crisp and Nick loves cherries, especially the fresh in-season cherries. I created a dessert we can enjoy year round. Using canned cherries is inexpensive and a great item to put in your pantry. “Life is just a bowl of cherries, don't take it serious, its mysterious.
