Directions:1. Pour 3/4 cup flour into a medium sized bowl and sprinkle 1/4 teaspoon of salt into it. Toss it together with a fork or whisk to combine. 2. Cut your chicken into 1 inch cubes and then put all the chicken into the flour. Use your hand to swirl around the chicken, making sure all sides are coated. 3. Heat a large skillet up over medium high heat. Once the pan is hot, pour 2-3 tablespoons olive oil into the pan. 4. Once the oil is hot, place your chicken into the pan. Let the chicken get nice and golden brown. Then turn each piece over and let it get golden brown on the other side. 5. While your chicken is getting lovely and golden, zest an orange for 1-2 tbsp orange zest. I always have cuties or halos on hand and I zest two of them. 6. Pour your orange juice and orange zest into a small mixing bowl. Add soy sauce, rice vinegar, sugar, granulated garlic, sesame oil, ginger, red pepper flakes, cold water, and cornstarch. Stir it all together until the cornstarch has dissolved and everything is mixed well. 7. Once your chicken is golden on both sides pour the heavenly orange sauce over the chicken. Bring the sauce to a simmer, cover and let it cook for 10-15 minutes over medium low heat stirring occasionally. 9. When the chicken is cooked through and the sauce is thick and bubbly, serve over top of rice, begin dishing up your plates- rice, and top with toasted sesame seeds. Makes 4-6 servings. *Note: Cauliflower rice is easy to make! Cut the cauliflower in half and cut the florets off from core. Discard the core and break up the florets into somewhat evenly sized pieces. Place florets in bowl of food processor in batches. Process until evenly chopped but not completely pulverized. You can now steam, microwave or saute with butter. Do not overcook your cauliflower rice. |

Notes: This dish is much healthier than your typical Chinese take out. It even tastes better too- Nick approved! The flavor of the orange sauce is unmatched and truly is heavenly. This recipe is adapted from the original recipe on the food blog, Jamie Cooks It Up. I serve this dish alongside stir fried turnips and carrots in a Chinese brown sauce (pictured above). This is a fun dish to eat with chopsticks. We love every opportunity to eat Asian style cuisine with our lightsaber chopsticks, and yes they light up... red and blue. Thank you Amazon!
