1 container of stir-fry rice noodles (14 ounces)
1 lb cooked chicken or shrimp (cook in pan with olive oil and sesame oil)
1 red bell pepper, sliced thin
2 carrots, chopped
2 zucchini, chopped
1/2 lb brussels sprouts, sliced thin
1/2 cup chopped dry roasted peanuts (salted or unsalted)
1/2 cup chopped fresh cilantro or you can sprinkle dried cilantro on each serving
1 lime cut into wedges for serving or you can just buy lime juice in a bottle (easier)

For the sauce:
1/2 cup rice vinegar
6 tbsp fish sauce
2 tbsp low-sodium soy sauce
4 tsp ketchup
4 tsp worcestershire sauce
2 tsp sesame oil
4 tbsp brown sugar
1 tsp red pepper flakes (optional)

Directions:

1. In a medium size bowl or measuring cup, stir together the eight sauce ingredients. Set aside.
2. Cook the rice noodles according to your package directions.You want them a tiny bit under cooked.
3. In a large pan or pasta pot (if you don't have a large enough pan), stir fry the bell peppers and carrots in a bit of oil until just softened, add in the zucchini and cook for several minutes.
4. Stir in the sliced brussels sprouts and cook until the sprouts are bright green, 2-3 minutes over medium heat. Stir in the cooked chicken or shrimp.
5. Pour on the sauce over the stir fry noodles and cook an additional 5-6 minutes until the sauce has somewhat evaporated/cooked into the other ingredients.
6. Serve warm and top the dish with peanuts, cilantro, lime juice, and more red pepper flakes (if you like it spicy). Makes 4-6 servings.

Pad Thai is one of my favorite comfort food dishes! For some people it's mac and cheese, but Pad Thai is it for me. This recipe is anything but traditional, and I've adapted it from the original recipe on the food blog, A Beautiful Mess. I've taken my own spin on it, adding the vegetables I prefer and more of them. Feel free to experiment! It's super easy to make and it's healthy too.
