Ingredients: 1 1/2 cups oat bran 1/3 cup lowfat milk 1/3 cup plain nonfat Greek yogurt 1 1/2 tsp vanilla extract 1 cup whole wheat flour 2 tsp baking powder 1 1/2 tsp ground cinnamon 1/4 tsp salt 1 tbsp coconut oil or unsalted butter, melted and cooled to room temperature 1 large egg 1/2 cup honey or a combination of 1/4 cup honey and 1/4 cup molasses 1 apple, cored, peeled or unpeeled, diced (leave the skin on for extra fiber and nutrients)

Directions:1. Preheat the oven to 350°F, and lightly coat 12 muffin cups with nonstick cooking spray. 2. In a medium bowl, stir together the oat bran, milk, yogurt, and vanilla. Let the mixture sit for at least 15 minutes. If you do not let the mixture sit, the muffins will turn out dry and crumbly. 3. While the bran mixture sits, whisk together the whole wheat flour, baking powder, cinnamon, and salt in another bowl. In a separate large bowl, whisk together the oil or butter and egg. Stir in the honey and/or molasses. Stir in the bran mixture, smearing out any clumps along the side of the bowl. Add in the flour mixture, stirring just until incorporated. Fold in the diced apple. 4. Scoop the batter into the prepared muffin cups (makes 12 muffins). Bake at 350 F for 17-19 minutes. Cool in the pan for 5 minutes before turning out onto a wire rack. They’ll keep at room temperature in an airtight container for up to 5 days; reheat individual servings in the microwave for 13-16 seconds. Makes 12 servings. |
