2 cups buttermilk
4 cups granulated sugar
2 teaspoons baking soda
4 cups pecan halves
2 teaspoons vanilla
2 tablespoons butter



Directions:
Directions:
Combine sugar, buttermilk, and baking soda in large pot. Stir mixture until sugar is completely dissolved. Place pot on low to medium heat and bring to soft ball stage (about 238º) stirring constantly.
Remove from heat; immediately add pecan halves, vanilla, and butter
Beat mixture briskly until it becomes glossy and starts to get very thick. (When you pull the spoon across it, mixture starts rolling--like parting the red sea.)
Use 2 spoons to quickly spoon it onto greased wax paper, making little patties.
Let cool completely before removing from paper.

If mix hardens before you can get it onto paper, return it to heat for a few seconds or until
it is once again the right consistency.
