1 lb. of rigatoni
one chopped onion
6 oz. pancetta (or bacon or sausage)
6 oz. tomato paste (small can)
1 pint of heavy cream
1/2 c. vodka
1/2 c. grated cheese

Directions:
Directions:
In one pot cook pasta according to package directions. Save at least one cup of the cooking water to thin sauce.

In second pot (make sure it's big enough to add pasta to later) sauté meat; add chopped onion and cook until meat is cooked and onion is translucent. .Add tomato paste and cook until dark red. Add vodka to deglaze the pot; then add heavy cream and cheese. Stir; used reserved pasta cooking water to thin sauce.

Add cooked pasta to sauce; stir over low heat until ready to serve.
