first cut chuck (or cross rib) 1" thick
28 oz. can crushed tomatoes
salt, pepper, diced garlic
generous fresh parsley
Romano cheese
dash of olive oil

2 servings rice

Directions:
Directions:
Trim chuck. Bake at 400º for 5 minutes, in the broiler pan. Then pour tomatoes, a pinch of salt, pepper, diced garlic, parsley on the meat, followed by Romano cheese and a dash of olive oil. Bake at 400º for 45 minutes, till parsley is dark brown. Then place under broiler flame for one minute. Serve with rice.
