1 pie crust
1 leek, white and light green parts only, cut into thin half moons
1 Tbsp. butter
8-10 roasted asparagus, cut into bite sized pieces
1 cup (about) shredded Gouda or Fontina cheese
4 large eggs
about 1.5 c. of dairy (I use a combo of evaporated milk and heavy cream)
1 tsp. herbs de provence

Preheat oven to 375º. Par-bake pie shell (with weights) for about 8 minutes.
Meanwhile, sauté the leeks in the butter till wilted.
When the crust is ready, spread the leeks in the bottom. Scatter the asparagus on top, followed by the cheese. Mix together the eggs, milk and herbs de provence.

Depending on the size of your quiche pan/pie pan, you might need more egg/dairy. Keep the ratio of one egg plus enough dairy to make 1/2 cup.

Bake at 375º for 30-45 minutes, depending on depth of your pan. The custard should be set and the top lightly golden.
