1 lb. tortellini, frozen or fresh
4 ounces prosciutto, chopped
2 Tbsp. olive oil
3 cloves garlic, sliced
1 Tbsp. tomato paste
1/4 c. heavy cream
1.5 c. frozen peas, thawed out a bit
2 Tbsp. parsley (fresh is better; dry works)
1/2 c. grated Parmesan cheese
salt

Boil a large pot of water; add salt. Add tortellini and cook according to package directions. About 2 minutes before they are done add the peas.

While tortellini are cooking, put a large skillet on medium heat. Add the olive oil and prosciutto, sautéing until crisp (prob. about 4 minutes) Add the sliced garlic and the tomato paste, cooking for about 1 minute. Add in about 1 cup of the cooking water from the pasta and simmer, reducing by about half (prob. about another 4 minutes) Add the heavy cream and simmer until slightly thickened, about 3 minutes.

Drain tortellini and peas. Add them to the skillet, coating them with the sauce. Top with parsley and cheese.
