1 lb. box of white rice
1/3 stick butter
2 eggs
1 cup grated cheese
salt and pepper to taste


breadcrumbs

Directions:
Directions:
Cook rice according to package directions. Mix with remaining ingredients. Make into balls (ice cream scoop is helpful). Roll balls in breadcrumbs. Place in refrigerator to set for 15 minutes. Fry in hot oil till brown on all sides. Drain on paper towels.
