4 medium carrots, chopped
2 celery stalks, chopped
4 cloves garlic, minced
2 cups lentils, rinsed
6 - 8 cups vegetable/chicken stock
1 can diced tomatoes
1 whole bay leaf
1 tsp. dried thyme
1 tsp. cumin
2 tsp. extra virgin olive oil
1/4 tsp. cinnamon
1/4 tsp. pepper
2 tsp. salt
1 1/2 tsp. red wine vinegar
2 Tbsp. tomato paste
2 Tbsp. lemon juice
1 bag frozen spinach

Directions:
Directions:
Thaw and drain spinach, getting rid of all excess water.

Throw all other ingredients in crockpot (except spinach and lemon juice).

Cook on low 8 hours (4 hours on high)

With 30 minutes remaining, mix in spinach. Before serving add the lemon juice.
