3 sticks butter
3 med. onions chopped
3 ribs celery chopped
2 bell peppers chopped
1/4 c flour
4 T parsley chopped
3 lbs shrimp cleaned and deveined
1 Qt. Half n Half
1 lb Velveeta cut into 1/2 inch diced cubes
2T jalapeno peppers chopped fine
3 cloves garlic minced
1 lb fettuccine noodles
Salt and pepper to taste
Parmesan to taste

Melt butter in large heavy saucepan.
Add onions, celery, bell peppers, cook till clear. Add flour blending in well. Cover and cook about 15 minutes, stirring occasionally. Add shrimp and parsley. Cover and cook another 15 minutes on low heat stirring occasionally. Cook noodles, drain. Add sauce and noodles together, folding gently so as not to break up shrimp. Pour into a 3 quart buttered casserole, sprinkle with Parmesan and bake at 350 for 10 minutes.

This dish can easily be modified to use cooked white meat chicken breasts cut into chunks. Obviously, chicken will take slightly longer to cook than shrimp. You can also use Louisiana crawfish tails. This is a delicious main course and the shrimp version is my very favorite! It was part of the La. Proud Collection of Home Cooking recipes and this one hailed from Convent, Louisiana. Keep in mind, everything is easily modified in order to get the consistency you want so don't be afraid to add/subtract milk or noodles to get your perfect outcome!
