6-8 baking potatoes such as Russet or Yukon Gold.
3 T butter
1/2 c chopped onion
1/4 c chopped celery
3 T all purpose flour
1/2 ts dried thyme (crushed)
1/4 ts salt
1/8 ts ground black pepper
4 c Half n Half, whole milk or light cream
1 1/4 c shredded cheddar cheese
1 c chicken broth
8 slices bacon cooked crisp, drained and crumbled
2 T thinly sliced green onion
1/4 c sour cream

Directions:

Bake potatoes with skin in a 425 degree oven till tender. Cool, peel, and chop into diced pieces. Set aside. In heavy saucepan, melt butter over med. heat. Add onion and celery, cook till clear, about 5-7 minutes. Stir in flour, thyme, salt, and pepper. Add milk and stir till thick and bubbly. Add potatoes, one cup of the cheese, and the chicken broth. Stir till cheese melts and slightly mash potatoes with a fork or heavy spoon. For topping, reserve 2 T crumbled bacon, stirring the rest of the bacon and 1 T of green onion into the soup. Heat through. To serve, top each serving with sprinkled reserved bacon, green onions, cheese, and sour cream. Makes 6-8 servings approx. 1 cup each.
