3 cups milk scalded
1/2 c sugar
1/4 ts. salt
1 ts. pure vanilla

Beat eggs till blended. Slowly add in sugar and salt.
Slowly add scalded milk whisking continuously. Pour into custard cups (about 6) and place cups on a cookie sheet with about 3/4 inch of water to created a water bath. Bake at 350 for 45 minutes until 'set'. Can be served hot, but cool is the best. If you prefer a fancier version in which caramelized sugar is at the base, do the following: Over medium heat, stir one cup sugar constantly till melts and caramelizes. It will thick and brown. Pour a little into each empty custard cup, then add milk/egg mixture over it. You can loosen with a sharp knife around the sides and flip over onto plate.

This is a delicious fancy dessert that our son,Theron Ferry, shared with me. You can even use a torch if making the lengthier version with caramel brown sugar on bottom. This does require more work, but makes a spectacular presentation. But if all you are concerned with is taste, the easier version is just fine!
