1 cup flour
1/2 cup butter or margarine softened
3 oz. cream cheese softened
3 oz. cream cheese softened

Filling:
1/2 cup chopped pecans
1 1/2 brown sugar
2 T. soft margarine
1 T. vanilla
2 eggs beaten
Dash of salt (1/4 ts. approx.)

Blend cream cheese and butter, Sift in flour. Chill 1 hour.
Shape into 1 inch balls, pressing them into mini muffin tin. Place pecans in pastry lined cups. Beat remaining ingredients by hand till smooth. Place in pastry cup, topping with 1/2 chopped pecans
Bake at 350 for about 25 min. or till filling sets.
Layers= Dough, pecans, filling, pecans.

These tarts use a total of one cup chopped pecans, 1/2 for layering onto the pastry and the other 1/2 for topping. They are incredibly tender and taste better than any single larger pecan pie! The recipe makes about 1 dozen or more. I refuse to use imitation vanilla extract for baking. There is a huge taste difference when you use the real thing! If you have access to Mexican vanilla, by all means use it! Viva la Pecan Tarts!
