1 1/2 lbs ground chuck
2/3 c cracker crumbs processed fine
1/3 c minced onion
1 1/2 ts. salt
1/4 gr. ginger
1/4 c milk
1 T shortening
1 egg
2 T cornstarch
1/2 c brown sugar (packed tight)
1 13 oz. can pineapple chunks (drain and reserve juice)
1/3 c vinegar
1 T soy sauce
1/3-1/2 chopped bell pepper

Mix together cracker crumbs, onion, milk, egg, salt, ginger. Add ground chuck. Mix well. Mixture will be messy and you want to wear thin gloves! Roll into meatballs about a 1 1/2 diameter max.
Melt shortening and brown meatballs on all sides. Drain fat from pan. In a bowl, mix cornstarch and sugar together. Add to hot pan. Stir in pineapple juice, vinegar, and soy, stir mixture thoroughly. Cook over med. heat about 10 minutes or at a full boil. Boil for one minute stirring continuously. Add meatballs, pineapple chunks, and green pepper. Cook together on med/low for 10-12 minutes. If you like, you can double all the liquid ingredient and cornstarch and sugar to make double sauce.

I prefer making twice as much sauce. It makes a nice party dish and can be frozen ahead easily. Serve with toothpicks or as a side dish spooned alongside another dish. This recipe never fails to get rave reviews!
