1 pound breakfast sausage ( 2 Packages)
¾ cup chopped onions
1 ½ cups finely diced celery
¾ cups margarine, melted
4 cups white bread cubes
4 cups whole wheat bread cubes
3 teaspoons poultry seasoning ( I use sage and a little salt instead of poultry seasoning)
¼ teaspoon ground black pepper

cook sausage and drain.
2. melt margarine. Add enough to sausage drippings to make 1 Cup.
3. sauté, onions and celery in margarine/ dipping mixture until onion is tender. DO NOT BROWN. Stir in about 1/3 bread cubes. put in the bowl and add remaining cubes, poultry seasoning, and pepper. watch your hands it’s hot and mix well.
4. spray the muffin dishes and fill them up bake for about 35 to 40 minutes at 350 degrees. Until the tops are crispy and brown.
