2lb lean (at least 80%) ground beef or chicken
1 large onion, chopped (1 cup)
2 cloves garlic, finely chopped
1 can (28 oz) diced tomatoes, undrained
1 can (15 oz) tomato sauce
2 tablespoons red chili flakes or chili powder
1 ½ teaspoons ground cumin
½ teaspoon salt
½ teaspoon pepper
1 can (15 to 16 oz) kidney or pinto beans, rinsed and drained
Shredded cheddar cheese, if desired

1. In 12-inch skillet, cook beef/chicken over medium heat 8 to 10 minutes, stirring occasionally, until brown: drain.
2. In 3 1/2 to 6 quart slow cooker, mix beef/chicken and remaining ingredients except beans and cheese.
3. Cover and cook on Low heat setting for 6 to 8 hours (or high heat setting 3 to 4 hours). I usually cook for 1 hour on medium
4. Stir in beans. Increase heat setting to High. Cover and cook 15 to 20 minutes or until slightly thickened. Sprinkle with cheese.
