-about 4 to 5 tomatoes
-1/3 cup olive oil
-1 tbsp balsamic vinegar
-1/2 lb or so of shell fish (keep it fresh!)
-2 tbsp of finely chopped red onion
-1 1/2 tbsp chopped basil
-1 tbsp lime juice
-1 avocado
-1/4 cup Parmesan cheese
-bowl of ice water for the tomatoes

-Bring a pot of water to a boil, place the tomatoes in the water for 10 seconds
-Scoop the tomatoes out and place them in the ice water immediately
-Skin the tomatoes and place the cores in a blender
-Puree the tomatoes with the olive oil and vinegar
-Add some salt and pepper and then with the mix in the bowl... stir with low heat 20 minutes
-In another bowl place the crab meat, spices and avocado chunks and roll them together
-Place equal portions of the crab meat mix into bowls and then pour the hot tomato puree into each bowl and serve
Add tobasco sauce to your liking
