Ingredients:  
-1 head of green cabbage, finely chopped or sliced (about 5 cups)
-1/4 head of red cabbage, finely chopped or sliced (about 1 cup)
-1 carrot shredded

Dressing;
-2 cups apple cider vinegar
-2 cups sugar
-1 1/2 tbsp canola oil or other mild vegetable oil
-1/2 cup chopped onion
-1/4 cup chopped green bell pepper
-3/4 tsp celery seed
-1/2 tsp kosher salt, finely ground
-1/2 tsp ground pepper
-1/4 tsp chopped garlic

-Toss the green and red cabbage with the carrots in a large bowl

Make the dressing;
-In another large bowl, mix the dressing ingrediants, stirring until all the sugar dissolves
-Transfer 1/2 the dressing to the bowl with the cabbage mix
-Toss the cabbage with clean hands
-Keep adding the dressing, but do not saturate... keep any excess dressing covered and place in the fridge for salad dressing or for marinade for vegetables
