-4 ounces fresh goat cheese
-1 ounce grated Parmigiano-Regglano cheese
-1/4 cup finely chopped scallion greens
-2 teaspoons grated lemon zest
-6 jalapeno peppers (large)
-3 ounces (12 slices) proscuitto

Directions:
Directions:
-Heat the oven to 450 F
-Line a rimmed baking sheet with tin foil, coat with a cooking spray
-In a medium bowl combine goat cheese, Parmigiano-Reggiano, scallion greens and lemon
-Half the peppers lengthwise, de-seed
-Stuff each half pepper with combined ingrediants from bowl
-Wrap each 1/2 pepper with the prosciutto with ends overlapping below the pepper
-Place the peppers on the cooking sheet, bake for about 15 minutes
