2-3 tbsp Olive Oil
6 Garlic cloves, cut and crushed
Meat-base: Any one or more of pork (country) spareribs, sausage, salt-pork strips, beef roast-cut, meatballs, etc.
1 small can Tomato Paste
4-6 Large cans of Tomato Sauce/Crushed/Pureed (ANY ONE OR MIX)
1 cup Red Wine
1 tbsp Basil or 10-12 Fresh Leaves
½ tsp Oregano
Salt, Pepper, Garlic Powder, Cinnamon Sugar (pinch) - use your imagination!

Pour olive oil into heated large saucepan. Brown meat-base and garlic cloves for approx 15-30 minutes turning as required. When done remove meat and stir in tomato paste. Continue to stir on higher heat making the paste a rich brown (almost burnt).

Add tomato sauce (or mixed preference), wine, basil, oregano, a few shakes of garlic powder, and previously browned meat.

Cover and cook under controlled heat for several hours (4-8) stirring occasionally to avoid burning bottom of saucepan.

Add ½ - 1 sauce can full of water midway through cooking process as sauce begins to thicken. Add salt and pepper periodically to taste and a pinch (or two) of cinnamon/sugar to enhance the sweet tomato flavor.

Meat may be removed prior to completion of sauce-cooking when it becomes thoroughly cooked and tender.

Note: This recipe yields a large pot of sauce.
