20 egg roll wrappers
1/2 lb of thinly sliced corned beef from the deli (cut into thin horizontal strips)
7 slices of Swiss cheese (cut each slice into 3 horizontal pieces)
14.5 oz can sauerkraut
1 container of light Thousand Island dressing
sunflower oil (to fry in a pan) or Pam spray (to bake in the oven)
small bowl of water

1. Drain and squeeze out any excess moisture from the sauerkraut and place in a bowl. Set aside.
2. Open your package of egg roll wrappers and cover with a moist paper towel to prevent the wrappers from drying out.
3. Make your egg rolls. Lay out an egg roll wrapper on a cutting board and top the bottom half (make sure to leave an empty border along the edge) of the wrapper with a piece of Swiss cheese, several thin strips of corned beef, and 1 tbs of sauerkraut. Wet all four of the edges of the wrapper with water using your finger. Fold right and left sides in, fold the bottom up, and then holding the ingredients in with your fingers, roll the egg roll from the bottom to the top to seal. Repeat this process until you have 20 egg rolls.
4. Heat sunflower oil in a pan. When the oil is hot, fry the egg rolls in batches until golden brown, turning to ensure even browning, for about 5 minutes. Let them drain on paper towels. If you prefer to bake the egg rolls, preheat the oven to 400 F. Spray the egg rolls lightly with non-stick spray and place them on a parchment-lined baking sheet. Bake for about 12-15 minutes or until lightly browned. Serve hot with Thousand Island dressing for dipping! Makes 10 servings (2 pieces = 1 serving).

I got the inspiration to create my own Irish egg rolls after my wife and I tried it at the Celtic Festival and Highland Games in Richmond, VA. These egg rolls are easy and fun to make, and are a great appetizer for any occasion.
