SWEET POTATO MIXTURE
2 lbs sweet potatoes enough to equal 3 cups cooked and mashed
1/2 cup granulated sugar
1/4 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1/4 teaspoon salt

TOPPING
1/4 cup butter
1/2 cup packed brown sugar
1/4 cup all purpose flour
1/2 cup chopped pecans

Cook potatoes and mash.

Mix first 6 ingredients together. Put into 2 quart casserole dish. Melt butter in small saucepan. Add brown sugar, flour and nuts. Stir well. Sprinkle over top of sweet potato mixture. Bake uncovered in 350 degree oven for about 30 minutes.

Variation: Add 1/2 teaspoon each of cinnamon and nutmeg to first 6 ingredients.
