One 5 - 7 Pound Beef Tenderloin
3 Tbsp, or More, Softened Butter
5 - 7 tsp Kosher Salt, or Montreal Seasoning
3/4 tsp Cracker Black Pepper

Preheat oven to 475º. Place beef in a roasting pan or on a wire rack in a pan. Rub butter over beef and sprinkle with seasonings. Place a meat thermometer into the thickest portion. Bake at 475º about 30 - 40 minutes until meat thermometer registers 150º (medium). Serve with horseradish sauce.

Preheat the oven to 550 °F. Rub pepper, salt, and garlic powder over beef. Place in a shallow pan and roast for 5,6 or 7 minutes at 550 °F. Switch off the oven and don't Open the Oven Door For Two Hours.
After two hours, remove from oven and serve.

Gary purchased the tenderloins at Whole Foods, and it is important to find the best quality meat possible. We served beef tenderloin for our Christmas brunch in 2015, and it was very popular.
