4-6 eggs, well beaten with 2 tbsp. grated Italian cheese
2-3 potatoes
1 onion, diced finely
Small amount of salt
ANY OR ALL OF THESE:
Diced green peppers
Diced ham or other luncheon meat
Sliced pre-cooked Italian sausage (leftover is good)
Mushrooms

Directions:
Brown potatoes in small amount of oil; add onions and salt. When cooked and lightly brown, add beaten egg/cheese mixture, lifting edges to allow egg to cook thoroughly. When brown on one side, invert on a plate, return to pan and brown on the other side. Invert on a platter again, cut in wedges and serve.

Frittata is the Italian word for omelet, or "fried pie". With eggs as a base, any number of additions can be made, but it is NOT made in the traditional omelet style, by folding the sides over the filling. It is instead fried as a pie, and cut into wedges for serving.
