SALAD:
Mixed greens, such as red lettuce, Bibb lettuce, etc.
2 medium Belgian endive, sliced
1/2 cup walnuts, lightly toasted
1/2 cup Roquefort cheese, crumbled (or any other good Blue Cheese)
2 ripe pears


DRESSING:
3 tbsp. raspberry vinegar
1 tsp. Dijon mustard
1 tsp. honey
1 tsp. walnut oil
1/2 cup vegetable oil (DO NOT USE A STRONG OLIVE OIL)

Directions:
Directions:
Gently wash and dry the greens, tearing into pieces. Toss with the endive and arrange on plates. Sprinkle each serving with the walnuts and Roquefort cheese.

Wash and dry the pears. Cut each in half and core. Slice each half lengthwise into thin slices and fan decoratively on top of the greens.

Whisk the vinegar with the mustard and honey until combined. Combine the oils, and whisk into the vinegar until emulsified. Drizzle vinaigrette over salad and serve.
