2 small or 1 large eggplant, peeled, cut in ¼ inch slices and lightly salted
3-4 eggs, well beaten
Prepared bread crumbs
Oil for frying (olive oil preferred, vegetable oil acceptable)
Basic meatless sauce
Grated Italian cheese
Mozzarella, thinly sliced, but optional

Directions:
Directions:
Dip eggplant slices in beaten egg and then into prepared bread crumbs. Fry well until brown and slightly crispy, using several frying pans to speed up process.

Place a little sauce in a casserole to coat bottom, then layer eggplant slices, sauce, mozzarella (if desired), and grated Italian cheese. Continue layers to top of pan.

Bake in 400° oven about ½ hour, or until top is lightly browned.

Serve hot or cold with lots of Italian bread.
