2 to 2½ lb. Italian sausages, cut in half crosswise (not lengthwise)
4-5 large green bell peppers, seeded and cut in strips
4-5 onions, cut up

Directions:
Directions:
In a disposable aluminum pan, mix together thoroughly all the pepper strips and onions. Place sausage pieces on top and place in a 400° oven for ½ hour, until sausages are lightly browned on one side. Turn sausage pieces over and return to oven. When reverse sides are brown, take a large kitchen spoon and stir everything together (sausages, peppers & onions). It will begin to make its own juice. Continue to cook until peppers are of desired tenderness (total time is about 1½ hours). Serve hot.

NOTE: A layer of sliced potatoes can be mixed with the peppers and onions if desired; in which case, you may have to increase cooking time.

A small can of tomatoes or tomato sauce may be added when you are mixing everything together, if desired.
