1 lb. chopped beef, OR ½ lb. beef & ½ lb. pork, OR ½ lb. beef, ¼ lb. pork & ¼ lb. veal
2 eggs, beaten
¾ cup prepared bread crumbs
½ cup grated romano or locatelli cheese
1 tbsp. dried minced onion, soaked in 2 tbsp. water
½ tsp. garlic powder
2 tbsp. dried parsley
Salt to taste

Blend all ingredients well, using hands to mix thoroughly. Shape into 12-15 meatballs about 2½ inches in diameter. Brown on all sides in oil in a skillet.

Add to sauce or without.....

Grandma also used to use day old bread, wet (yuck) instead of bread crumbs.....her theory also was that if you were multiplying your recipe to accommodate a good number of people, you shouldn't multiply your eggs beyond 5.....then supplement with a little milk or water......
