Basic meatless sauce
12-15 meatballs, OR 1 lb. chopped beef browned, OR 1 lb. cooked sausages, sliced
1 lb. lasagna noodles, uncooked
2 lb. ricotta
1 lb. mozzarella, diced
Grated Italian cheese

Directions:
In a disposable aluminum pan, place a generous amount of sauce to coat bottom. Add a single layer of uncooked noodles, overlapping edges. Add a layer of ricotta, smoothed, mozzarella, 3 or 4 mashed meatballs, some grated cheese and a generous amount of sauce. Repeat layers to top of pan, ending with pasta, mozzarella and LOTS of sauce (a large amount of sauce is necessary for the cooking of the pasta).

Cover tightly with heavy duty foil and cook in preheated 375° oven for 45 minutes. Remove foil and continue to cook until top starts to brown. Allow to sit for 15 minutes.

NOTE: In place of uncooked Ronzoni noodles, you may use prepared lasagna noodles purchased from an Italian shop, using the same procedure.If you wish to cook the lasagna noodles, cut down on the amount of sauce used in preparing, and skip the step of cooking with aluminum foil cover. Go directly to the step of cooking open for about 30-40 minutes until top begins to brown and is done.
