1 cup dried lentils, washed and picked over
¼ cup diced celery
1 diced onion
1-2 cloves finely minced garlic
1-2 canned tomatoes, hand crushed OR 1 can Del Monte tomato sauce
4 tbs. olive oil
1½ qt. water
1 scant tsp. salt
½ lb. pasta, cooked al dente

Directions:
Directions:
Mix lentils, celery, onion, garlic, tomatoes, oil and water in a large saucepan or Dutch oven. Bring to boil, lower to simmer with a half cover for ½ hour. Add salt, continue to simmer slowly for another ½ hour, or until lentils are tender but not bursting out of their skins.

Add barely cooked drained pasta, make sure there is enough water to cover all. Bring to boil, cover tightly and remove from flame.

Allow to sit and "marry" for 10-15 minutes before serving.
