1-1/4 cup elbow macaroni
2 tbsp. olive oil
2 medium carrots, coarsely chopped
2 medium stalks celery, coarsely chopped
1 medium onion, coarsely chopped
1 16 oz can stewed tomatoes
2 cans chicken broth
1 can water
1 tsp. salt
2 19 oz cans cannellini beans
1 19 oz can red kidney beans
1 10 oz pkg. frozen chopped spinach
Grated parmesan cheese

Directions:

Prepare macaroni according to package directions. Drain and rinse. In a large pot, heat oil over medium high heat. Add carrots, celery & onion, sauté until tender. Add tomatoes, chicken broth, water and salt and bring to a boil. Reduce heat and simmer uncovered ten minutes.

Drain beans; empty 1 can of white beans into a bowl and mash with a fork. Add mashed beans along with the rest of the beans. Stir well, add macaroni and frozen spinach to soup; heat through until
spinach is thawed out and soup is hot. Serve with grated parmesan cheese. Serves 6.
