1 - 3-3½ lb. chicken (large fryer is okay)
2 peeled onions
3-4 peeled carrots, cut in chunks
2-3 celery stalks
Generous amount fresh parsley
1 tsp. salt
1 large green lettuce leaf
3 qt. cold water

Directions:
Place chicken in enamel pot with water and bring to boil. Skim, add all other ingredients. Allow to come to a boil again, lower to simmer for 1½ hours, skimming from time to time, until chicken is tender and liquid is reduced to about half, about 2 hours.
Remove chicken, cut into portions to serve separately, with a salad or vinaigrette dressing. To strained soup, add diced carrots and about 1 box (1 lb.) cooked pasta or noodles for soup. Serve with Italian grated cheese on the side.

.....great for a cold day spent in the house.....my mom would make this dish on New Years Day and we would stay home, watch TV and eat soup!!! Good memory......
