Shells Stuffed with Pork, Mushrooms and Onion Recipe

Ingredients: 12 ounces jumbo pasta shells 1-1/4 lbs ground pork or mild pork sausage 1/2 cup diced onion 1 cup finely chopped fresh mushrooms 1/4 tsp dried oregano 1/4 tsp dried thyme salt and freshly ground black pepper 3 cups shredded mozzarella cheese 1/4 cup freshly grated Parmesan cheese 3 cups red sauce (jarred, canned, homemade)

Cook shells according to package directions until just al dente. Drain and set aside to cool.
In a large skillet over medium heat, cook the pork, onion and mushrooms for about 10 minutes or until the meat is no longer pink. Stir in spices and season, to taste, with salt and pepper. Transfer to large bowl to cool.
Add cheeses to the cooled pork mixture and stir to combine.
Grease 9x13 dish. Fill the cooled shells with the pork mixture and arrange them in the prepared baking dish. Top the filled shells with the pasta sauce. Sprinkle the shells with the remaining 1 cup mozzarella cheese.
Bake immediately in 375F oven for 15-20 minutes -OR- cover and chill in fridge before freezing. |

Notes: Another make ahead meal from "Not Your Mother's...". This was a great way to use up the pork sausage from our pigs and my homemade pasta sauce without making spaghetti over and over!
