4 to 6 bone-in chicken breasts or 1 roasting chicken, giblets removed (I've used boneless but cut down cooking time)
1 tsp fine sea salt
1 tsp garlic powder
1/2 tsp freshly ground black pepper
1 tsp herbes de provence, chili powder or mixed Italian herbs (optional)

Yield: 4-6 cups
Time: 3 hrs 5 mins

Sprinkle the chicken pieces with salt and herbs. Place in a 5-6 quart slow cooker. Cook on low for 6 to 8 hours or high for 3 to 4 hours.

When the chicken is cooked, remove and set aside to cool. Once cooled, remove chicken from bone and chop or shred. Place in desired amounts in zip top bags and freeze for future use!

Depending on how you season, this can be used for tacos, enchiladas, salads or chicken soups.
