1/3 cup chopped fresh basil
1 tsp grated lemon rind
2 Tbsp fresh lemon juice
1 Tbsp olive oil
2-1/2 tsp Dijon mustard (Grey Poupon)
1/2 tsp sugar
1/4 tsp salt
1/4 tsp freshly ground black pepper
1 garlic clove, minced
4 cups (1 inch) cut green beans (approx. 1 lb)
1-1/2 cups chopped plum tomatoes (I usually use grape or cherry)
1 (10 ounce) package frozen baby lima beans, cooked and drained
4 bacon slices, cooked and crumbled

Time: 20 mins

Combine first 9 ingredients in a bowl (basil through garlic), stir with a whisk. Steam the green beans, covered for 8 minutes or until tender. Combine green beans, tomato, and lima beans in a large bowl. Pour basil mixture over bean mixture and toss well. Sprinkle with bacon and serve.

Our family loves green beans; probably our favorite green veggie. But it can sure get boring to have them the same way each time. I found this recipe somewhere (a magazine maybe?) and have used it on and off for many years. it's great for Christmas dinner, too, because it looks very pretty!
