1 lb. cauliflower florets
1 tsp ground cumin
2 Tbsp olive oil, divided
1/4 cup vegetable or chicken broth
1-1/2 Tbsp lemon juice
sea salt or kosher salt, to taste
1/2 cup cilantro leaves, coarsely chopped

Preheat oven to 375F.

In a medium bowl, toss the cauliflower florets with the cumin,1 tablespoon olive oil and stock. Transfer to ceramic or glass baking dish and roast for 25-30 minutes, until cauliflower is tender and lightly browned.

Meanwhile, whisk together the remaining olive oil with the lemon juice. Add cilantro, then pour over the cauliflower while still warm and toss to coat. Season to taste with salt. Serve warm.

This recipe came off the package of cauliflower I bought at Costco. This is pairs great with Indian dishes, but is very versatile so try it out!
