2-1/2 cup buttermilk pancake mix
3 Tbsp sugar
1 cup water
4 eggs, beaten
1/4 cup butter
6 medium tart apples, pared and sliced thin
1/2 c sugar
2 tsp cinnamon

Directions:
Combine mix, sugar, water and eggs. Spread batter in 9x13 pan.

Saute apples with 1/4 cup butter. Arrange apples over pancake mixture.

Sprinkle with nuts. cover with remaining 1/2 cup sugar and 2 tsp cinnamon.

Bake, covered with foil for 20 minutes. Remove foil and bake an additional 10-12 more minutes.

I got this recipe when working at Frontier Pack Trains with Jeff my last summer of college. The owners parents, Herb and Dora Lee, would come up stay for a while and she made this for a pack station breakfast. They were neat people!
