1 lb. small mushrooms
3/4 cup red wine vinegar
1/4 cup water
1/2 cup olive oil
1 bay leaf, crumbled
1 tsp tarragon
1/4 tsp salt
1 clove garlic, crushed
1 Tbsp chopped chives or green onion tops

Rinse and wipe mushrooms. Cut off hard stem ends. Combine everything and marinate at least 12 hours. Stir occasionally.

The marinade, though it looks good, should not be re-used.
