Ingredients: 1 package Lawry's Chili Mix or other package chili seasoning 1 onion chopped 1 bell pepper chopped 1 clove garlic, minced 3 Tbsps. olive oil 1 lb. Lean Ground Beef, browned and drained 2 cans dark red kidney beans 1 can Rotel tomatoes, (I use mild) 1 can whole tomatoes, cut up some with knife 1/2 Hershey's chocolate bar 1/2 cup finely-shredded Sharp Cheddar Cheese

Directions:Brown and drain ground beef. Set aside. Sauté onion, bell pepper, and garlic in 3 Tbsps. olive oil until onion and bell pepper just begin to change colors. Combine all ingredients, excluding Hershey's chocolate bar and grated cheese, but including drained beef, into large sauce pan, Bring to boil, then reduce heat, cover and simmer for 45 minutes. Add grated cheese and 1/2 Hershey bar broken into small bits. Stir while chocolate and cheese melt. Takes about 10 to 15 minutes. Serve chili with your choices of sour cream, chopped onions or guacamole. |

Notes: This is my original recipe which has been an award winner in two chili cook-offs over the years. I think it's the chocolate that makes the difference. You can make the chili as hot as you like by using a spicier variety of seasoned chili mix and/or Extra Hot Rotel. In case you are wondering, you won't be able to recognize a chocolate flavor once chili is prepared but will notice a rich, full bodied flavor that the chocolate brings when merged with other ingredients.
