1/2 lb. fresh salmon
4 T Butter
3/4 C diced purple onion
1 1/2 C diced celery
1/2 C diced yellow pepper
1/2 C diced red pepper
1/4 C minced parsley
1 T capers, drained
1/4 t Tobasco
1/2 t Worchestershire sauce
1 1/2 t Old Bay seasoning
1 C bread crumbs
1/2 C Mayonnaise
2 t Dijon mustard
2 eggs, lightly beaten
Olive oil
Salt and pepper

Directions:
Directions:
Brush salmon with olive oil, sprinkle with salt and pepper. Place on baking sheet, skin side down and bake for 15-20 minutes at 350 degrees. Allow to rest 10 minutes and refrigerate until cold.
Saute the veggies, capers, Tobasco and Worchestershire, 1/2 t salt, 1/2 t pepper, Old Bay and capers until veggies are soft.
Flake the salmon, add bread crumbs, mayo, mustard, veggies and eggs. Mix well and refrigerate for at least 30 minutes. Shape into about 10 cakes.
Heat 2 T butter and 2 T olive oil in a skillet and fry the cakes 3-4 minutes per side until browned.
