1 Pkg. Fajita Seasoning
1/2 C Soy sauce
1/2 C Worchestershire sauce
1/2 C Red wine vinegar
2 T salt
2 T Garlic powder
2 T Onion powder
4 T Tobasco Sauce
3 T Liquid Smoke
2 T Brown Sugar

Combine ingredients except cracked black pepper. Add thinly sliced ( 1/8th inch) venison, from which all the fat has been removed. If you prefer chewy jerky, cut with the grain. If you prefer more tender, cut across the grain. Marinate overnight. Lay strips out in a single layer and dehydrate.
If using the oven, line a cookie sheet with foil and bake at a very low temp, around 170. The baking process can last 6-8 hours and should continue until the meat is dry.
