1 pound ground beef, or more if desired
1/4 cup chopped onion
1 clove minced garlic or 1/8 teaspoon garlic powder
1 three ounce can sliced mushrooms
1 ten ounce can condensed beef broth
1 Tablespoon lemon juice
1/4 teaspoon salt
1/8 teapoon ground pepper
4 ounces (3 cups) uncooked medium egg noodles
1 cup sour cream
1 Tablespoon snipped parsley (optional)

Directions:
Cook beef, onion, and garlic in a Dutch oven until meat is browned. Drain fat. Drain mushrooms, but reserve liquid. Combine liquid from mushrooms, lemon juice, salt, and pepper, and add to Dutch oven. Stir in uncooked noodles. Cover and simmer for 15 minutes until noodles are tender. Stir in sour cream and mushrooms and cook and stir until heated through. Do not boil. Top with snipped parsley. Makes 6 servings.

This recipe came from Lecia Cecconi, my neighbor in Efird Dorm at Wake Forest. Lecia, my roommate Beth White, and I cooked most of our meals in our room, and this recipe was a standard dinner during our sophomore year of college. Lecia was a music major, and her instrument was clarinet. Beth was an early education major. We all played recorders and krumhorns in the medieval / renaissance group Collegium Musicum. We enjoyed sitting on our balcony / fire escape which overlooked the beautiful Wake Forest quad.During the fall of the year, there was a dormitory fire at Efird, fortunately with no injuries. Our second story fire escape provided a quick exit through the smoke.
