1 pounds of lean ground beef
1 large green pepper diced
1 onion, chopped
1 cup celery, diced
4 tablespoons butter
2 tablespoons flour
1 - 2 teaspoons chili powder
1/2 teaspoon salt
1 large can stewed tomatoes - crush or dice into small pieces

Directions:

Saute green peppers, onions and celery until soft.
add flour, chili powder and salt. Stir to combine and make sure there are no lumps. Add un-drained tomatoes and water and cook until thickened.

Add 1/2 of the creole sauce to the hamburger meat. Press into a loaf pan and bake at 350º for about 20 minutes. Top with the rest of the creole sauce and continue to bake until meatloaf is cooked through, usually about 30 - 40 minutes.

This was a favorite of mine at the McCamey School cafeteria. I never got their recipe but I found one that is very similar.
