1 LB lean ground beef
1 (12 oz.) package frozen mixed vegetables
1 small can V-8 juice
1 can Campbell's Cheddar Cheese soup

Directions:
Directions:
Brown meat in a heavy skillet with a lid. Pour off grease and add the frozen mixed vegetables and V-8 juice. Spread the Cheddar cheese soup (undiluted) over the top.
Put the lid on and simmer 30 minutes, stirring occasionally.
The stew should be thick and if not, leave the lid off and cook a little longer.

This is another good recipe that will get kids to eat their vegetables. The only change that I had to make was I removed all the "Lima Beans" from the frozen mixed veggies because Casey would spit them out!
