2 1/2 cups finely ground almonds (packed into measuring cup)
1/2 teaspoon baking soda
2 tablespoons tapioca starch
1/8 teaspoon salt
contents of 2 earl grey teabags (I have used Camomille and Strawberry Tea)
1/4 cup coconut oil
1 tablespoon olive oil
1/4 cup pure honey**
3 tablespoons 100% pure maple syrup
1 tablespoon pure vanilla extract (or seeds of 1 vanilla bean)

1.Preheat oven to 325F. Line a baking sheet with parchment paper.
2.Whisk almonds, baking soda, tapioca starch, and salt in a large bowl.
3.In a smaller bowl, melt the coconut oil in the microwave, about 25 seconds. Add the rest of the wet ingredients and the tea. Stir and let sit until the mixture is cooled to room temperature.*
4.Thoroughly mix the wet ingredients into the dry, until you have a uniform dough.
5.Spoon tablespoons of dough and roll into balls. Place 2" apart on the baking sheet and press down to about 1/4" thickness.
6.Bake for 10-12 minutes in the center of the oven, or until the edges are golden brown.
7.Let cool on the sheet for 5-10 minutes before transferring to a wire cooling rack.
8.Store in an airtight container.

*Adding the tea to the warm wet ingredients helps to infuse some of it's flavor throughout the dough.
**Measure our oil first, then use the same measuring cup to measure the honey- it will slide right out making sure you don't have all your honey left stuck to the cup.
