2 packages, baby rack of lamb(I usually get at Costco-they come 2 in a package, 8-9 pieces each)
salt
pepper
Dijon mustard, one 8-10 ounce jar, may need more
1-bunch fresh parsley, chopped

Directions:
Directions:
Pre heat oven to 425F
Let lamb come to room temp before seasoning and cooking. Season liberally with salt and pepper. Set aside.
Chop parsley and mix with entire small jar of Dijon mustard, about 1 cup.
Coat the lamb on all sides and place on baking sheet. Roast in the 425 F oven for about 12-15 minutes or until cooked to internal temperature of 140 F. You may want to turn over once during cooking. Do not over cook-you can always cook more if too rare after 15 minutes.
Cover and let rest for a few minutes before cutting into individual pops. Serve on a platter and watch them disappear.
