4 Salmon filets , 6 ounce portions or your option for larger portions
1 tomato, cut into wedges
2 carrots, cleaned and julienne cut
1 red or other colorful pepper, julienne cut
1 small red onion, julienne cut
1 small jar Hoisin Sauce
1 lemon, sliced
parchment paper
salt & pepper to taste

Salt and pepper salmon filets and set aside while you get all ingredients chopped and ready to put together.
Cut parchment paper into large circles, big enough to make a cooking vehicle for the salmon. In other words, you need to encase the salmon in a package, folded and crimped to steam cook the fish.
Preheat the oven to 400 F
Place 2 T of Hoisin Sauce on a circle of parchment paper and place salmon on top of the sauce. Place all the vegetables on top of salmon. Fold parchment paper over to form pocket, making folds every inch until it is sealed. Place on a cookie sheet and baked for 12-15 minutes until fully cooked. Careful when opening the package-steam is hot. Can be served right in the package with rice or pasta.

Really,even if you don't like salmon, try this! It is so moist and flavorful and cooking in the parchment does not make an offensive smell in your house.
